We were crushed when chef Kelly Liken shuttered her eponymous Vail restaurant after a 10-year run. Beyond the top chef’s driven locavore dishes, sommelier Jeremy Campbell’s wine cellar was among the best in Ski Country. While Liken works on a new restaurant for Sonnenalp Club, Campbell is behind Vail's hot new wine bar Root & Flower tucked along Wall Street steps from Gondola One. Campbell is one of the Vail Valley’s only Advanced Sommeliers certified by the Court of Master Sommeliers, but the wine list here isn’t intimidating. Instead Campbell’s picks are organized by flavor profile, and the menu’s wine aroma profile wheel guides drinkers to the perfect après sip. A Portland native, Campbell has a passion for Willamette Valley wines, so check in on new and rare bottles he’s hiding in back.
A tasty small-plate menu is on par with these pours; chef Matt Limbaugh’s seasonal menu ranges from an artisanal cheese plate, to house made pickles, to a Cuban panini with slow-cooked pork loin and provolone on sourdough. The full menu is served until 1:00 a.m., making Root & Flower one of Vail’s best late night bites.
